Black Bean & Corn Salsa
1 large can black beans (ready to eat)
1 small can sweet corn (ready to eat)
1/2 can diced tomatoes
handful of cilantro
juice of 1/2 a lime
Drain liquid from cans, combine together in small bowl. Finely chop cilantro (throw out the
stems). Toss in bowl. Squeeze lime. Toss salsa until mixed well. You might want to season
it a tad as well (salt, pepper, Tony's....).
Sometimes I throw in chopped chives (or green onions). Serve with chips, or wrap in a tortilla
for a vegetarian taco.
Serves 4 as a salsa. Serves 2 as a vegetarian taco.
